Convert cooking time to a slow cooker
Slow cookers turn a quick oven or stovetop dish into a long, hands-off braise. This tool converts a conventional cooking time into the equivalent slow cooker time on Low or High — for home cooks adapting a recipe to a crock pot.
How it works
The converter maps the conventional time into one of three bands and returns the recommended slow cooker range. Low runs roughly twice as long as High, since both reach a similar simmer but High gets there faster:

Example
A beef stew that takes about 45 minutes in a covered casserole dish converts to roughly 8–12 hours on Low or 4–6 hours on High. Choose Low for tougher cuts like chuck or shin that need a long, gentle cook to become tender. High is better when you want dinner ready in the afternoon without starting at breakfast.
Practical tips for adapting recipes
Liquid reduction: Slow cookers trap almost all moisture because the lid forms a seal. A conventional recipe that calls for reducing the sauce on the hob will not reduce in a slow cooker — and you may end up with a watery result. As a starting point, reduce the liquid in the original recipe by about one-third before adding it to the slow cooker.
Dairy and delicate additions: Cream, milk, sour cream, and fresh herbs added at the start will break or lose flavour over a long, moist cook. Add them in the last 20–30 minutes with the lid off or slightly ajar to let steam escape and allow the sauce to tighten.
Root vegetables need the bottom: Dense vegetables like carrots, turnips, and potatoes take a long time to cook and should go on the bottom of the pot, closest to the heat. More delicate ingredients go on top.
Lid discipline: Each time you lift the lid, steam escapes and the temperature drops. This can add 20–30 minutes to the cook. Only lift the lid for a purpose — to stir a dairy addition in the final stage, or to check for tenderness in the last hour.
Whole spices over ground: Ground spices can turn bitter over many hours of heat. Whole spices (bay leaves, star anise, peppercorns) are better for long slow cooks, and fresh herbs added at the end are far brighter than dried herbs cooked for eight hours.

Cuts that benefit most from slow cooking
Not every dish translates well to a slow cooker — the technique suits certain ingredients far better than others. The long, moist, low heat breaks down collagen into gelatin, which is why the best results come from:
- Tough braising cuts: beef chuck, brisket, lamb shoulder, pork shoulder. These cuts are inexpensive and become richly tender after 8 hours of slow heat; the same result would take 2–3 hours in a conventional oven.
- Legumes and pulses: dried beans and chickpeas (soaked first) cook well unattended. Note that kidney beans must be boiled rapidly for 10 minutes before slow cooking to destroy the toxic lectin that slow heat alone does not neutralize.
- Root vegetable soups and stews: the sealed environment concentrates flavour without the risk of a scorched pot bottom.
Dishes that do not adapt well include those requiring high dry heat (roasts with crispy skin, anything browned or caramelized by the oven’s top heat) or delicate proteins like fish or shellfish that overcook quickly.
Low vs. High: when to choose each
Both settings ultimately bring the pot to a simmer, but the rate of temperature rise is different. Choose Low when:
- You are cooking a tougher cut that benefits from the longest possible collagen breakdown (8–10 hours of steady heat often outperforms 4 hours on High even at the same final temperature).
- You want to start the dish in the morning and have it ready for dinner without an exact schedule.
Choose High when:
- The dish needs to be ready the same afternoon.
- You are adapting a recipe with a shorter oven time (30–45 minutes original) where the long Low window would over-soften vegetables or change the texture.
How different pot sizes affect timing
The conversion table assumes a reasonably full pot — roughly half to two-thirds capacity, which is the ideal fill level for most slow cookers. A very small amount of food in a large pot will reach temperature faster and may finish at the lower end of the time range. A very full pot may take longer to come to temperature and should stay at the higher end. If you are halving a recipe for a large slow cooker, check doneness earlier than the calculator suggests.
